Chocolate and Fruits pairing

By | artisanal chocolate, chocolate makers, craft chocolate, bean-to-bar chocolate, small batch chocolate | No Comments

Chocolate is practically bursting with fruit flavors, from red berries to bright pineapple, and so it makes perfect sense to pair it with the real stuff. I particularly like to use these pairings to remind myself what each fruit tastes like, so I can better recognize fruity notes when tasting chocolate by itself or just for fun. There are two ways to pair chocolate and fruit. I won’t break these out into individual categories since you’ll probably get the picture quickly. 1. Pair like flavors together. I tried this morning, together with my family, Belize chocolate with raspberry (and almonds 😋) and surprise… my daughter, who refused all the time to eat dark chocolate, ate much of this combination 😃. A Madagascar bar with bright…

Chocolate & … Coffee

By | artisanal chocolate, barista, chocolate makers, coffee, craft chocolate, bean-to-bar chocolate, small batch chocolate, tree-to-bar chocolate | No Comments

Me personal, I love coffee as much as I love chocolate and I’m thinking that maybe I will become a barista and a coffee blogger also in the near future. A small shop with craft chocolate and fresh roasted coffee…mmm… I love it! I dream about the day when more and more people will know about origins and varieties of chocolate and coffee, like when we choose wine, you know … “I like Merlot!. That’s my variety. I drink only Merlot.” We are far from this, but I will not abandon my dream and until then I will continue to speak my voice (I feel like in “Legally Blonde 2” now :)). It is still not the norm to have the variety on the chocolate/coffee…

Chocolate And Dogs

By | artisanal chocolate, chocolate makers, craft chocolate, bean-to-bar chocolate, dogs, pets, small batch chocolate, tree-to-bar chocolate | No Comments

Mmm chocolate…yah, just to say chocolate and you think of something good or you start to feel good. Nearly every human loves chocolate, for the immense pleasure that it gives and it doesn’t contain anything that could be directly bad for us (except for sugar or fats if we eat large quantities or if we eat not quality chocolate). Dogs, so nice and smart, are very loved by humans: old, adults or children. Chocolate and dogs are each great on their own, but their combination could be fatal for dogs. Here it is why: cocoa contains theobromine, one of the substances that make chocolate so good for humans but which is toxic for dogs, cats and other pets. Theobromine is a stimulant similar with caffeine and…

Do You Know How To Taste Chocolate?

By | artificial intelligence, chocolate makers, craft chocolate, bean-to-bar chocolate, Fără categorie, internet of things | No Comments

If you know how to taste chocolate this is an opportunity to validate your method or to teach me things that I did not write into this guide. If you don’t know how to taste chocolate and you can just say that is good or bad, sweet or not, this is your chance to learn. Like good wine or craft beer, craft chocolate has plenty of flavors, thousands it is said. If you’ll taste methodically, in time you’ll be able to make the difference between cocoa beans, chocolate bars or producers. Choose the chocolate you prefer: dark, milk or white (pink, maybe in the future), with cocoa from South America or Africa, single origin or not. Read the bars wrap (cocoa percentage, origin), choose craft,…

Artificial Intelligence, Internet of Things and Chocolate

By | artificial intelligence, chocolate makers, craft chocolate, bean-to-bar chocolate, internet of things | No Comments

The main trends in technology now are artificial intelligence (AI) and internet of things (IoT) which putted together are very powerful. IoT scales millions of devices generating large amounts of data. Many specialists believe that AI is the best solution to give a fast and accurate sense of all this big data. It is estimated that in the next years AI will replace human jobs. In a recent article, in Science Magazine in April 2017 is written that “self-taught artificial intelligence beats doctors at predicting heart attacks” because of complexity of information involved. Using AI also in retail industry, will bring benefits. A big percent of products fails at the early stage of their life because they don’t offer what the customers want. Jason Cohen,…

Trends in bean-to-bar (b2b) 🍫 making

By | craft chocolate, bean-to-bar chocolate | No Comments

Until recent, small b2b 🍫 makers did not exist. The production of 🍫 was big companies’ exclusive. Few things were known about the quality of 🍫 and we were influenced by commercials to believe that what the big companies are selling is the best. Small b2b 🍫 makers have been very practical and they used intuition, curiosity and all the equipment they had to figure out how to produce 🍫 without specialized technique which at that moment was not available for laboratory or small production. Their perseverance but also the equipment producers who started to see the business opportunities, led to an increasing number of small b2b 🍫 makers. They have growth year after year but without gaining growth in market share. The influences they…

The initial cost for starting a bean-to-bar (b2b) 🍫 business

By | chocolate makers, craft chocolate, bean-to-bar chocolate, Fără categorie | No Comments

Each time you think about doing something, you actually make a plan. Simple or elaborated, it is a plan, a succession of steps that you have to do to achieve that “something” or objective. The plan for sure involves resources like time or money. Both time and money are limited, like any other resource, so you have to spend it with so much judgment, responsibility and efficiency. In business, the plan is called budget/business plan and it gives a monetary equivalent to what you want to achieve. It is the difference between revenues and expenses (profit) or between cash-in and cash-out (cash at your disposal). The bigger the difference, the more successful your plan will be. Important it is also the period of time in…

Is 🍫 a healthy food?

By | chocolate makers, craft chocolate, bean-to-bar chocolate, Fără categorie | No Comments

I know that for some time 🍫 was considered guilty, among other foods, for obesity, dental caries or acne. I read also good things, like eating 🍫 releases endorphins to the brain, mimics the feeling of love, acts as a pain reliever, reduces the risk of heart disease and cancer. For me it is not clear how much these claims are valid because most of the studies performed on cocoa are funded by companies with substantial gains from positive results, creating motivation to arrive to desired results rather than honest results, whatever these may be. I am a 🍫 maker, 🍫 blogger, economist, etc. not a doctor. I consider a healthy food any food that is made from natural ingredients and makes me feel good,…

Is Craft Chocolate 🍫 Expensive?

By | craft chocolate, bean-to-bar chocolate | No Comments

If you think that craft 🍫 is expensive, it is probably because: You never tasted craft 🍫. Taste and compare a craft 🍫 with an ordinary one that is sold in most of the supermarkets. It is like comparing a barista coffee with Nescafe or craft beer with Bergenbier. You don’t know what is behind craft 🍫. If we were in the situation of doing the job of people from areas where cacao is growing, we couldn’t face the difficult conditions (almost 95% humidity, and very hot). The climate change, diseases that destroy a third of the world’s cacao crop every year, few farmers that can afford fertilizer, just sporadic investments in improving the trees are just few problems that have to be solved to…
